3cl - 1 oz. of  Hayman’s Old Tom Gin

2,25cl - 2/3 oz. of lemon Juice

2,25cl - 2/3 oz. of House-made Grenadine

The recipe

Add all ingredients to mixing glass.  Add ice and shake well.

Strain into chilled cocktail glass.

Dried Apple chip, for garnish (optional)

The Calvados

Calvados Boulard V.S.O.P. is a Calvados from Pays d’Auge. It is issued of blending of different Calvados Pays d’Auge from 4 to 10 years old. They will stay in the casks for the necessary time to obtain a perfect dissolve. A well balanced harmony between vanilla, wood and ripe apples.

The 'Royal Smile' is a based on a pre-prohibition recipe from the 'Waldorf Astoria Bar Books' from both 1931 & 1935.

It was created for a banquet in 1910 to coincide with a theme of pink roses and to become part of the decoration as well.

The original recipe called for equal portions of all ingredients which included 'Applejack' as a base spirit.

Once I decided to make a base spirit carry the cocktail, I knew that Boulard Calvados had the appropriate amounts of fruit and finesse to realize the potential of the original recipe.  I have also substituted the original 'London Dry' style gin for the more harmonious 'Old Tom' gin which allows the Calvados to be the star.
